RECIPE OF THE WEEK :: (YUM!)
Spinach Artichoke Dip
1 pint heavy whipping cream
1 C parmesan cheese
1 C shredded mozarella
2 T butter
1 pkg frozen spinach (Shanti used about two large handfuls of fresh spinach)
1 jar artichoke hearts (found at Modern Bazaar, or I'm sure at SPAR!!)
1 C pizza cheese
Cook spinach by wilting in a pan with butter. Remove from pan and set aside.
In the same saucepan, heat and mix cream, parmesan, mozzarella and butter until bubbly. Add cooked spinach and artichoke. Pour in casserole dish and top with pizza cheese. Bake at 350 for 20-25 minutes.
Serve with tortilla chips, sour cream and salsa.
